Quick Healthy Blueberry Crumble (GF, VG)

There I was, standing in the kitchen having a standoff with a pint of blueberries. Blueberries are funny, one day they are perfectly fine and the next they are moulded. Now, yes, I could throw them into the freezer and forget about them. Then later find them freezer burnt; resulting in the inevitable end of the trash bin. Orrrrr… I could use them now while I’m thinking about them. I hopped onto pinterest to look up what to do with these things. The main recipes were pies, cobblers and muffins. Now, muffins sounded like the healthiest of options here but I’m not going to lie, a lot of blueberry muffin recipes might as well be called blueberry cupcakes. So, I decided to make my own recipe! One that didn’t start with a stick of butter and a cup of sugar (not that I don’t love those things, I’m just trying to be GOOD). I liked the idea of the cobbler, you can veneer go wrong with warm berries with a sweet topping. But how could I make this healthy (or healthier)? Then I looked up at my pantry and found ol’ reliable. My container of oats. Seriously, why are oats so versatile?! 

 
 

I threw together what I like to call my Blueberry Crumble and I was surprised at just how good it is. Just enough sweetness with a nice tart kick at the end from the berries. When I have a sweet tooth in the future I will definitely be making this again. And this guilt-free dessert definitely has me dreaming of summertime… how great would this be with fresh berries made from the garden?! Currently drooling on to my keyboard just thinking about it. How do you like to use up berries? Do you also like to create desserts that are totally acceptable to eat for breakfast? Or is that just me? 


Quick Healthy Blueberry Crumble

2 servings

Filling: 

1.5 cup blueberries 

2 tsp sugar 

1 tsp vanilla extract 




Crumble: 

1/2 cup oat flour (I blend my own) 

2 tbsp gluten free oats

1 tbsp maple syrup 

1 tbsp coconut oil, melted 

Pinch of salt 




Cooking Instructions: 

Preheat oven to 350 

In a bowl combine blueberries, sugar, lemon juice and vanilla. 

In a separate bowl combine oat flour, oats, maple syrup, coconut oil and salt; mixture will appear dry and crumbly. 

In a small baking pan add your blueberries then add Crumble on top. 

Pop into the oven and cook for 20-25 minutes and enjoy as is or with a scoop of vanilla ice cream!
